1 cup butter
2 cups sugar
5 eggs
1 teaspoon coconut extract
2 cups self-rising flour
1 cup buttermilk
1 cup coconut shredded
1 cup sugar
1/2 cup water
1 teaspoon coconut extract
Preheat oven to 350. Cream butter and sugar. Add eggs, one at a time and beat for 2 minutes each time. Add extract. Add next 3 ingredients, add alternately with buttermilk to the egg mixture. Stir in coconut. Pour batter into baking pan and bake for 30 to 35 minutes over very low fire. Add top coals midway through cooking time.
To make glaze, combine remaining ingredients and boil for 2 minutes.
Pour over warm cake.
