    1 gallon white hominy
    1 gallon yellow hominy
    1 to 2 pounds peppered bacon
    4 to 5 onions
    4 to 5 bell peppers
    1 whole stalk of celery
    4 cloves of garlic
    1 teaspoon of oregano
    1 teaspoon of cumin
    1 can of diced (or fresh) tomatoes
    Hatch chili powder
    all-purpose seasoning

    Brown the bacon, onion, bell pepper, celery and garlic. Then add hominy, tomatoes and seasonings. You have to decide how much of the bacon grease to use. Calk said he sometimes leaves it all in.
