Chipotle Paste
List of Ingredients
1 (7- or 8-ounce) can chipotle chiles in adobo
4 to 5 cloves garlic, minced (about 2 tablespoons)
1 tablespoon dried Mexican oregano
2 tablespoons vegetable or olive oil
Recipe
Puree chiles with their sauce in blender or food processor, about 1 minute. Add garlic, oregano and oil and pulse until combined, but still slightly chunky. Cover and store in refrigerator.Spread it on chicken or fish before grilling, or mix it with mayonnaise or vinaigrette to add a kick of flavor.
