Giant shrimp with 'beer' blanc

List of Ingredients
1 shallot
3 cloves garlic
2 Hatch chilies (torch to remove skin)
1 Cup heavy cream
1 Pound giant tiger shrimp (about 10)
1 beer (Chef Jeff uses Shiner)
corn flour masa(for dredging)
egg wash: 3 eggs beaten with 1 cup milk
oil, for frying
lime juice
Coarsely chop the shallot and crush the garlic. Place in a large pot, along with beer and cream, bring to a boil and let reduce, about 10 minutes. Torch chilies to remove skin, chop coarsely and add to pot, along with juice of one lime.
Puree in blender after the beer and cream are reduced and cooled.
Add salt and pepper to corn flour spread on plate. Dredge shrimp in flour and egg wash, repeat. Fry shrimp for about three minutes.
Pour mixture from blender onto on plate and top with fried shrimp
