Root Beer Shrimp
List of Ingredients
12 ounces (16 to 20) shrimp
8 ounces self-rising flour
2 ounces cornstarch
1 ounce baking powder
3 ounces Root Beer, ice cold
Root Beer Dipping Sauce (recipe follows)
Recipe
Peel and devein shrimp, leaving on tails. Dry and keep cold.
Sift dry ingredients together.
Heat 2 quarts of oil to 375 degrees in a large, heavy-gauge pot.
Just before serving, place shrimp in bowl with dry ingredients. Add ice-cold root beer quickly, in small amounts. Mix well until an even coating consistency is achieved. Drop coated shrimp into hot oil by tail. Fry until puffy and golden. Remove from oil and drain on paper towels. Keep warm. Serve with root-beer dipping sauce.
Root-Beer Dipping Sauce
Zest and juice from 2 mandarin oranges
16 ounces Root Beer
1 tablespoon sugar
1 tablespoon sesame seeds, toasted
Cut zest into julienne strips and blanch in boiling water for 10 seconds. Drain. Simmer root beer, blanched zest, sugar and juice of the two oranges until reduced by half. Add sesame seeds. Sauce should have a light, syrupy consistency.
Makes about 1 cup.
