Shrimp Ceviche
List of Ingredients
1 pound thawed of fresh rock shrimp
2 diced Roma tomatoes
1 medium red onion, diced
3 diced Jalapeno peppers
1/4 cup fresh chopped cilantro
1/2 cup fresh lime juice
1/4 cup + 2 teaspoons salt
2 diced avocados
Method:
In one gallon of boiling water, add the 1/4 cup of salt. Add the rock shrimp & cook for 2 minutes. Drain and set aside to cool. Combine remaining ingredients and chill for 2 hours. Serve with corn chips
