Recipe Introduction
Not all grapes are suitable for raisins, but a rule of thumb is to choose a sweet variety that is relatively thin-skinned.
List of Ingredients
5 pounds red seedless grapes, washed and stemmed
1 c Kumquat-flavored rum or a light rum
Preheat the oven to "warm" or its lowest setting. Line a large baking sheet with parchment paper. Place the grapes on the parchment paper and put in the to dry for 12 hours or vernight. Place the rum in a mixing bowl. Remove the dried grapes from the oven and place in the bowl with the rum, stirring to coat evenly. Allow the raisins to sit for 1 hour. Drain the raisins in a sieve and discard the rum. Place the raisins on the parchment-covered baking sheet and return to the oven to dry 24 to 36 hours. Remove the raisins from the oven and place in an airtight container. The raisins will keep indefinitly in an airtight container at room temp. Makes 2 cups
