Honey Ice Cream
List of Ingredients
3-1/2 cups cream (or combination of milk and cream)
1 cup honey
Grated rind of 2 oranges
1 teaspoon almond extract
1/4 teaspoon salt
cup almonds, toasted and chopped
Toast the almonds on a jelly roll pan in 350-degree oven for 10 minutes or until golden. Set aside.
In large mixing bowl, beat the milk/cream and honey using electric mixer or large whisk. Add orange rind. (Zest the oranges directly over the mixing bowl so the rind and oils fall into the bowl. Beat in the almond extract and salt.
Freeze in an ice cream maker according to directions, until firm. Transfer to a bowl and stir in the almonds. Cover tightly and place in the freezer for a few hours. Makes about 2 quarts.
