    Peach Sorbet

    List of Ingredients






    1 cup water
    1/3 cup honey
    1 pound ripe peaches (about 3 large, or 4 small), sliced, pitted and peeled--If fresh peaches aren't available you may substitute frozen peaches
    1/2 cup kefir or yogurt
    1 tablespoon finely grated ginger
    1 cup raspberries (optional)

    To make a syrup, place sweetener and water in a small saucepan, bring to a boil and lightly boil for 5 minutes. Chill.

    Place peaches in one layer on a shallow pan and freeze for 40 minutes or until frozen.

    Place frozen peaches, syrup and kefir in a blender. Squeeze the grated ginger to extract 2 teaspoons of ginger juice and add the juice (discard the spent ginger pulp). Puree.

    Divide sorbet between 4 chilled glasses. Garnish with raspberries and a sprig of mint if desired and serve. Serves 4.
