HOLIDAY CANDIED FRUIT PEEL
List of Ingredients
This recipe takes advantage of seasonal citrus and makes an unusual hostess or party gift. Bundle the strips in cellophane gift bags, and tie with a pretty ribbon or raffia.
1 grapefruit
3 small oranges
4 lemons
12 cups cold water, divided
2 1/2 cups sugar, divided
1 3/4 cups hot water
1/2 cup honey
Recipe
Peel first 3 ingredients, reserving sections for another use. Scrape off and discard white portion of rind; cut rind into thin strips. Place in a large saucepan. Add 6 cups cold water; bring to a boil, and boil 10 minutes. Drain and rinse. Return strips to pan. Add remaining 6 cups water; bring to a boil, and boil 10 minutes. Drain and rinse.
Bring 1 1/2 cups sugar, 1 3/4 cups hot water and honey to a boil in saucepan; boil 1 minute. Stir in rind strips; bring to a boil, and boil 4 minutes. Drain well, and let cool 10 minutes. Toss with remaining 1 cup sugar until coated. Spread on wax paper; cool completely. Yield: 14 ounces.
