Herbed Salt
List of Ingredients
Place flavoring ingredients in the bowl of a coffee grinder used specifically for spices. Add ¼ cup of salt and grind until fine. Pour into a bowl and grind 3/4 cup more salt. Add that to the bowl and stir to blend. For a very fine salt, grind kosher salt. For a coarser blend, grind coarse sea salt but for a shorter time.
This will keep for six months in an airtight container in a cool, dark place. Makes 1 cup.

If you plan to give herbed salt as a gift, place fresh herb leaves against the inside of the jar.
Suggested combinations
Lemon-pepper salt: Grind the zest (colored part only) of 1 lemon, 1 tablespoon peppercorns and 1/4 cup of coarse sea salt. Grind remaining 3/4 cup of salt; combine all.
Uses: Sprinkle on chicken, steak or hamburgers.
Italian salt: Grind 1 teaspoon each of dried basil, oregano and fennel seed with 1/4 cup kosher salt. Grind remaining 3/4 cup of salt; combine all.
Uses: Sprinkle on chicken; mix in meatloaf or pasta salad.
Lavender salt: Grind 1 tablespoon coarsely chopped lavender (be sure you use cooking lavender, not potpourri lavender) with 1/4 cup kosher or coarse sea salt. Grind remaining 3/4 cup salt; combine all.
Uses: Sprinkle on a roasting chicken with a splash of lemon juice.
Basil salt: Grind 6 large basil leaves with 1/4 cup kosher or coarse sea salt. Grind remaining 3/4 cup salt; combine all.
