7 slices of bread, pulverized
1 10.5-ounce can condensed French onion soup
2 large eggs
1 teaspoon black pepper
1/4 cup ketchup
2 pounds ground round or chuck
1/2 pound ground pork
Vegetable gravy (recipe follows)
Heat oven to 300 degrees.
In a large bowl combine bread crumbs, soup, eggs, pepper and ketchup. Blend ingredients just until mixture is evenly mixed. Add ground beef and pork. Combine but DO NOT OVERMIX. Place in a loaf pan. Bake 1 to 1 1/2 hours or until internal temperature reaches 165 degrees. Serve with vegetable gravy.
Makes 10 4-ounce servings.
Vegetable gravy
1 carrot
1 stalk celery
1/2 green or red bell pepper
1/2 yellow onion
1 teaspoon Worcestershire Sauce
Dash garlic salt
1/4 teaspoon pepper
1 10.5-ounce can condensed tomato soup
Cut vegetables into julienne slices. Place in 1 cup water. Steam 5 to 8 minutes. Add Worcestershire Sauce, pepper and garlic salt to vegetable mixture. Place vegetable combination, including liquid from steamed vegetables, and tomato soup in a blender. Blend until vegetables are pulverized. Return to pan and heat to just below boiling. Ladle over sliced ready-to-serve meatloaf.
Makes 2 cups.
