Texas Ranch Cake
List of Ingredients
3 (16 oz.) pkg. Jiffy cornbread mix
1 lb. ground sausage
1 onion, chopped
1 bell pepper, chopped
1 (10 oz.) can pinto beans with jalepeno
1 can Ro-tel tomatoes
1 lb. Velveeta
Recipe
Bake the cornbread in three round cake pans. In a heavy skillet, brown the sausage, onion, and bell pepper together till the sausage is done and the vegetables are soft. Drain the grease. Add the Ro-tels. Drain the pinto beans, mash them, and add them to the sausage. Cube the Velveeta and add that too. Stir until the cheese melts.
Stack the cornbread like cakes, filling the layers with the sausage mixture. Top with a layer of the sausage. If you want you can put some sliced jalepeno on top.
