Take a 1-pound box of cake mix, add a stick and a quarter of [softened] butter, and you've got shortbread cookies.
You can add vanilla or almond extract to white, yellow or chocolate cake mix. With the almond, you can also add chopped almonds. You can even added peanut butter and put chocolate kisses in the center.
Take a really small ice cream scoop and scoop them out. Then place them on a lightly greased baking pan. The cookies flatten on the pan. You bake the cookies for 8 to 10 minutes at 350.
You can turn the dough into refrigerator cookie dough. Roll it in a log, and wrap it in plastic wrap. It will last four weeks refrigerated, three months frozen. As you cut off cookies, roll them in sprinkles, sugar or nuts, so you have a different cookie every day.
