Cilantro-Nut Mash

1 cup chopped fresh cilantro
¼ cup grated Parmesan cheese
½ cup chopped pecans
2 cloves garlic, minced
¼ cup olive oil
2 tablespoons smooth goat cheese
Kosher salt to taste
Directions:
Combine cilantro, cheese, pecans and garlic in a food processor. Process by pulsing and gradually adding oil. Add goat cheese, and season with salt, processing until slightly smooth. Makes 1 cup.
Note: Spread this rich concoction on grilled fish and chicken, or add it to cooked rice to make a great side dish for lamb chops. Fold it also into buttermilk biscuit batter for savory biscuits to go with fried chicken or steaks.
