Chipotle Cream Sauce for Ravioli
List of Ingredients
2 cups heavy cream
1 or 2 canned chipotle chiles in adobo sauce
Salt to taste
Recipe
In a blender, puree cream with one chipotle chile. Add salt to taste. If spicier sauce is desired, add another chile and blend again. Pour mixture into a saucepan set over medium heat. Cook, stirring constantly, until sauce thickens slightly. Makes enough sauce for 24 large or 48 small ravioli.
