Garlicky Parmesan Pasta and Steak
List of Ingredients
1 pound uncooked spaghetti
2 tablespoons butter
1 cup freshly grated breadcrumbs
1/2 cup grated Parmesan or other hard cheese
Freshly ground black pepper to taste
2 (1-inch-thick) boneless strip steaks
3 tablespoons olive oil
3 cloves garlic, minced or pressed
4 green onions, thinly sliced
Cook pasta according to package directions, reserving 1/2 cup of cooking water. In a heavy, ovenproof 12-inch skillet over medium heat, melt butter; stir in breadcrumbs. Cook, stirring, until lightly browned. Place mixture in a large bowl; toss with Parmesan and pepper to taste. Set aside, reserving 1/4 cup to top steaks.
Preheat oven to 400 degrees. Sprinkle steaks with pepper. In same skillet, heat oil over medium heat. Add garlic and green onions; cook until garlic is fragrant, about 1 minute. Add to crumb mixture.
Raise heat to high; sear steaks in same skillet about 3 minutes per side. Sprinkle each steak with 2 tablespoons crumb mixture. Place skillet in oven to continue cooking while you finish pasta, about 5 minutes.
Pour drained pasta into bowl with crumb mixture; toss. Add some reserved cooking water if mixture seems too dry. Slice steak and divide among 4 warmed plates, accompanied by pasta.
