(Not Your Mama's) Macaroni and Cheese

2 packages (about 12 ounces each) frozen macaroni and cheese entrees, such as Stouffer's
1/2 cup chopped roasted red peppers
1/4 cup crumbled blue cheese
1/4 cup grated Parmesan cheese
1 dash hot pepper sauce
1/4 cup grated sharp Cheddar cheese
Paprika
Heat oven to 400 degrees. Thaw macaroni in the microwave, about 3 minutes on high.
In a 2-quart casserole, gently combine the macaroni, peppers, blue and Parmesan cheeses and hot sauce. Use a paper towel to wipe the inside of the casserole dish above the macaroni so it doesn't look yucky after it's baked.
Sprinkle with Cheddar cheese and paprika. Bake, uncovered, about 15 minutes, or until cheese is melted and bubbly.
Makes 8 servings.
