PEANUT NOODLES

SERVES 4
1/2 pound fettuccine
1 tablespoon cooking oil
2 cloves garlic, minced
3/4 cup chicken broth
1/3 cup peanut butter
3 tablespoons rice vinegar
1 tablespoon soy sauce
2 teaspoons grated fresh ginger root
1 heaping teaspoon brown sugar
1/4 teaspoon salt
2 green onions, sliced
red pepper flakes to taste
Cook fettuccine in boiling, salted water until done. Drain, rinse with cool water and reserve.
Heat the oil in a large skillet. Add garlic and stir-cook 15 seconds. Add the broth, peanut butter, rice vinegar, soy, ginger, brown sugar and salt. Bring to a boil, then stir in the fettuccine until the pasta is covered with sauce.
Gloop everything onto a platter, scatter with green onions and serve. The red pepper flakes are optional.
If you like a lot of peanut sauce on your noodles, cook only 1/4 pound pasta for two people. Or double the sauce to serve 4.
