Semolina's muffuletta pasta

Makes 2 servings
2 tablespoons extra-virgin olive oil
2 ounces ham, cut into sticks
2 ounces salami, cut into sticks
½ cup olive salad from following recipe
2 cups penne pasta, cooked
1 tablespoon parmesan
½ cup grated provolone
Toasted sesame seeds to garnish
Chopped parsley to garnish
Saute ham and salami in the olive oil just until it starts to brown slightly. Add the olive salad and cooked pasta and saute until the penne is hot. Transfer to a serving platter and garnish with parmesan, provolone, sesame seeds and parsley.
Semolina's olive salad
Makes about 2 cups
1 cup chopped green olives
½ cup sliced black olives
½ cup chopped tomatoes
1 tablespoon garlic, minced
1 teaspoon fresh basil, chopped
1 teaspoon cracked black pepper
Combine all ingredients. Allow to marinate for at least two hours before use.
