Looking for sweet ways to fill frozen mini phyllo shells to create a small-scale dessert buffet try these. The shells are small enough that people can try several flavors. Here are nine combinations devised from pantry staples.
Peaches 'n' cream
Mix a tablespoon of sour cream with a heaping teaspoon of brown sugar. Dice a peach slice (canned is OK) and stir into sour cream. Fill shells and sprinkle with brown sugar.
Variation: Substitute grape halves and slivers of pineapple for the peach.
Cherry-chocolate cheesecake
Fill shell halfway with whipped cream cheese. Top with Bonne Maman cherry preserves, a few milk chocolate baking chips and slivers of toasted almond.
Pudding cups
Spoon prepared chocolate snack pudding into a baked, cooled shell. Top with a banana slice and milk chocolate chips.
Variation: Top banana with vanilla snack pudding mixed with crumbled vanilla wafers.
Limey blueberries
Spread a layer of Dickinson's lime curd on bottom of shell and top with blueberry yogurt. Garnish with a blueberry.

Spread a layer of Wilkin & Sons raspberry seedless preserves on bottom of shell; top with semisweet chocolate chips and slivers of toasted almond.
Apricot preserves
Fill shell with apricot preserves; sprinkle with toasted coconut and nuts. Or stir in diced peaches and top with whipped cream.
Peaches and apple
Fill shell with peach preserves; mix in bits of diced green apple.
Caramel apple, but better
Fill warm shells with bits of chewy caramels and milk chocolate baking chips; let cool and top with diced apple.
Go Greek
Layer vanilla yogurt with honey. Sprinkle with toasted walnuts.
WHEN TO FILL?
