12 pounds very firm pears
5 medium onions, peeled and roughly chopped
6 bell peppers, red, green and yellow, seeds removed and roughly chopped
5 cups apple cider vinegar
4 cups sugar
1 tablespoon salt
1 tablespoon mixed pickling spices
1 tablespoon turmeric
Put pears, onions and peppers through meat chopper or into a food processor. Add this and the other ingredients into a very large, heavy pot. Bring to a boil, then simmer for 30 minutes. Put in sterilized canning jars and seal. The recipe makes 17 pints
