Pickled Mango
List of Ingredients
Mango ....4 C.
Salt ....2 T.
Water ....6 C.
Sugar ....4 C.
Distilled Vinegar....3 C.
Salt ....3/4 C.
Red food coloring (optional)....2 T. (aprox.)
Recipe
Peel, cut completely through mango and remove center of seed, outer shell of seed will stay attached to the fruit.
Add 2 T. salt, mix and let sit over night.
Mix the other five ingredients together, bring to a boil and let cool.
The next day, rinse and drain fruit.
Soak fruit slices in sugar/vinegar water for at least 2 or 3 days.
Add the food coloring according to your preferences in color depth.
Place in small "Zip lock" bags, refrigerate
