Spicy Cucumber and Ginger Relish

List of Ingredients
1 peeled English Cucumber, diced
1 medium vine-ripe tomato, diced
half of a small red onion, diced
3 Tbl. grated fresh ginger
half a bunch of cilantro, roughly-chopped
2 Tbl. toasted sesame seeds
3 Tbl. rice wine vinegar
1 1/2 tsp. sesame oil
salt and pepper to taste
Mix all ingredients, chill and allow to marinate for 30 minutes to one hour before serving with grilled fresh fish, chicken, or shrimp.Recipe
