    Three-Pepper Catsup

    List of Ingredients






    2 tb Olive oil
    1/2 c Minced onion
    1/2 c Sliced green onions
    1/2 c Minced red bell pepper
    3 Pickled jalapenos
    Stemmed and minced
    2 Garlic cloved; minced
    1/4 ts Dried thyme; crumbled
    1 1/2 c Catsup
    3/4 c Canned crushed tomatoes in
    Heavy puree
    1/2 ts Pepper





    Recipe



    Heat oil in heavy medium saucepan over low heat. Add onions, pepper, chilies, garlic, and thyme. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Mix in catsup, tomatoes, and pepper. Cover partially and simmer until thickened, stirring occasionally, about 5 minutes. Cover and refrigerate. ** Makes about 2 3/4 cups ** ** Keeps for two weeks **
