Ingredients:
1/2 cup butter
1/4 cup olive oil
1/4 cup finely chopped onion
1 tablespoon minced garlic
Juice of 1 lemon (about 3 tablespoons)
2 pounds boneless, skinless chicken breast, cut into 1/2-inch pieces
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup minced fresh parsley
2 medium chopped tomatoes
Buttered noodles or rice
Directions:
In a large skillet, heat butter and oil. Saute onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Cook, stirring constantly, for 5 to 8 minutes or until chicken is cooked through. Add tomatoes and heat through. Serve over noodles or rice.
Serves 4 to 6.
