    4 boneless, skinless chicken breasts
    4 thin slices provolone or mozzarella cheese
    3 ounces sliced pepperoni
    1/4 cup mayonnaise
    1/2 cup Italian seasoned breadcrumbs

    Pound the chicken breasts between waxed paper till they are 1/4-inch thin. Layer each with a slice of cheese and a layer of pepperoni. Roll up each jellyroll style and fasten with toothpicks. Slather the outside of each rolled stuffed breasted with mayonnaise, then roll in breadcrumbs. Cook in a well-greased 1-1/2 qt dish at 350 degrees for 35 minutes. Remind your guests to remove the toothpicks! (To make Chicken Cordon Bleu, simply substitute thin ham and swiss cheese for the pepperoni and provolone)
