Creamy Chicken w/ oil-cured mushrooms

List of Ingredients
2 tbs oil from the Oil-cured Mushrooms
3 garlic cloves, chopped
1 1/2 lbs boneless chicken breasts, cut into strips
3/4 c medium-sweet Madeira wine (can sub chicken broth)
1 lb (16 oz jar) Oil-Cured Mushrooms, drained
Scant 1 1/2 c sour cream
5 TBS chopped fresh tarragon
Salt and freshly ground pepper to taste
Recipe
Heat the oil in a large skillet, add the garlic, and saute for two to three minutes. Add the chicken and cook, stirring frequently, for five to six minutes until the chicken is golden and the juices run clear. Add the wine (or broth), simmer for three to four minutes, then add the mushrooms, sour cream,tarragon, and salt and pepper. Heat through for about three minutes until the mushrooms and sour cream are hot.
