Pretzel Chicken Strips

2 boneless, skinless chicken breasts
2 eggs
6 tablespoons grated Parmesan cheese
2 cups finely crushed pretzels
2 tablespoons olive oil
Soak chicken breasts in salt water for 1 hour in refrigerator. Then cut chicken in half lengthwise. Beat eggs in a shallow bowl. Combine Parmesan cheese and pretzel crumbs in another bowl. Dip chicken in egg . Then coat with pretzel mixture. Heat oil in skillet. Cook chicken for 2 to 3 minutes per side or until juices run clear. Makes 2 servings.
