    Tamale-Stuffed Chicken Breasts

    8 chicken breast halves, pounded flat
    1 tablespoon salt, or less to taste
    12 tamales, cooked
    1 garlic clove, minced
    2 cups cornbread, crumbled
    1/4 cup water
    1 tablespoon cumin, or less to taste
    1 jalapeno, seeded and finely chopped
    1/4 cup butter, cut into 8 pieces
    1/2 cup (1 stick) butter
    1 cup heavy cream
    2 teaspoons chili powder

    Thoroughly mix tamales, corn bread, garlic, cumin, jalapeno and, water. Sprinkle salt on chicken breasts. Place 1/2 cup tamale mixture on a breast, add 1 butter pat (1 teaspoon), cover tamale mixture with breast. Shape into a roll. Continue with remaining breasts. Bake in 350-degree oven for 25 to 30 minutes or until browned.

    Meanwhile, melt butter over low heat. Slowly stir in cream. Continuously stir until mixture begins to thicken. Stir in chili powder. Serve cream mixture spooned over chicken breasts. Serves 8.
