    3 jalapenos, seeded and coarsely chopped
    1 onion, coarsely chopped
    3 ribs celery, chopped
    1 bell pepper, seeded and chopped
    2 TBS peanut oil
    4 cups freshly cooked Texmati rice

    Combine the jalapenos, onion, celery, and bell pepper in a food processor and pulse several times to make a finely chopped vegetable paste. Heat the oil in a large skillet and fry the paste for 5 to 7 minutes, or until soft. Add the hot rice and blend well.
