    Ingredients:

    1/4 cup walnut or olive oil
    4 tablespoons apple juice
    2 tablespoons balsamic vinegar
    1/2 teaspoon Dijon mustard
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    SALAD

    5 ounces mixed salad greens (about 6 cups)
    4 medium Braeburn or Fuji apples, cored and cut into chunks
    2 tablespoons chopped walnuts
    1 tablespoon freshly grated Parmesan cheese
