    BEFUDDLED JALAPENO BEER MUSTARD

    1/2 cup dark beer
    1 tsp. apple cider vinegar
    1 Tbsp. yellow mustard seeds, whole
    1/2 tsp. crushed red pepper flakes
    9 ozs. prepared coarse-ground mustard 2 red jalapeno peppers, roasted, seeded and finely diced
    1/2 tsp. crushed red pepper flakes
    1 Tbsp. fresh chives, chopped
    2 tsps. ground mustard powder


    In a small bowl, blend together beer, vinegar, mustard seeds, ground mustard and red pepper flakes; cover tightly and refrigerate overnight. Pour mixture into medium saucepan and simmer over medium-low heat until liquid is reduced by half. Add chives, jalapeno pepper and coarse-ground mustard; blend well. Cool. Place in airtight container and refrigerate. Keeps for several days.
