    Ceasar Salad and Dressing

    List of Ingredients








    Dressing:
    5 fresh cloves of garlic, peeled
    3 egg yolks
    6-8 anchovie filets
    3/4 cup olive oil
    1 tsp. worcestershire sauce
    2 Tb. Romano or Parmesan cheese
    1/2 tsp. Dijon mustard
    freshly cracked black pepper, to taste
    juice of 2 lemons



    Directions


    In a blender add the garlic, egg yolks and anchovies. Puree.
    On a slower stting add half of the oil, slowly.
    Add the lemon juice, Dijon mustard and wocestershire.
    Slowly add the cheese and the remaining oil.

    This dressing needs to be very thick (as thick as or thicker than mayonnaise).
    Toss with croutons and Romaine lettuce.
