Makes 8 servings
5 large ripe tomatoes, peeled, quartered
1 green pepper, cut into rings
1 sweet onion, thinly sliced
3/4 cup cider vinegar
4 1/2 Tbsps. sugar
1 1/2 tsps. celery seeds
1 1/2 tsps. mustard seeds
1/2 tsp. salt
1 cucumber, peeled, thinly sliced
Combine tomatoes, green pepper and onion rings in a bowl. Mix other ingredients except cucumber slices; bring to a boil and boil 1 minute. Pour hot mixture over vegetables; let stand at room temperature until cool. Add cucumber when cool. Refrigerate several hours; stirring once or twice. Drain before serving. Good accompaniment for barbecued meat or poultry. This is an excellent salad in summer when tomatoes are plentiful
