FRUIT SLAW
List of Ingredients
8 cups chopped cabbage or packaged slaw mix, see Note
1 cup shredded carrots
� cup white raisins
� cup dried cranberries (Craisins)
� cup sliced green onion
� cup chopped fresh parsley
3 tablespoons shredded coconut
� cup seedless red or green grapes, sliced lengthwise
� cup light (not fat-free) mayonnaise
� cup light (not fat-free) sour cream
3 tablespoons raspberry or cider vinegar
Salt, sugar and pepper to taste
Recipe
Mix all of the ingredients. The dried fruit and coconut provide a certain amount of sugar. You may want to add some more according to your taste. Can also use dried apricots or fresh apples.
Serves 12-16
Note: Sometimes cabbage is a little bitter; if so, use a pinch or two of sugar or honey to sweeten it.
