Italian Couscous Salad

2 cups water
1 cup couscous
1/2 cup chopped black olives
2 cups diced tomatoes
1/3 cup Italian salad dressing
1/2 cup chopped pepperoni
In a medium saucepan, bring water to a boil. Remove from heat, stir in couscous, cover and let stand 10 minutes. Remove cover, fluff couscous with fork and let cool to room temperature.
Combine couscous with remaining ingredients in a large serving bowl; toss well. Serve immediately, or cover and chill before serving.
Makes 6 servings.
