Jalapeno Corn Slaw
List of Ingredients
1/2 head cabbage, thinly sliced
2 cups roasted corn kernels
2 red bell peppers
(roasted, peeled, stemmed, seeded and diced)
1 red onion, diced
3 Tbsp fresh lemon juice
3 Tbsp champagne vinegar
3 jalapeno chiles, stemmed and minced
1 cup coarsely chopped cilantro
freshly ground black pepper
salt
Recipe
Combine all the ingredients in a bowl, including salt to taste.
Toss well. Cover and let stand in the refrigerator for 2 hours
before serving. Serves 6-8
