Mexican Caesar Dressing
List of Ingredients
3 large cloves garlic, chopped
6 anchovy fillets
3 large eggs
1/2 cup red wine vinegar
2 TB. Dijon mustard
1/4 cup fresh cilantro leaves
3 serrano chiles, stemmed, seeded and minced
1/2 tsp. salt
1/2 tsp. ground black pepper
1/2 cup grated Cotija or Parmesan cheese
1 1/2 cups good-quality olive oil
Combine all ingredients except the olive oil in a food processor and blend for 1 minute. Add olive oil slowly with the blender running.
