Nutty Wild Rice Salad

List of Ingredients
1/2 cup wild rice
2 cups canned beef bouillon, undiluted
Dressing (recipe follows)
1 cup frozen peas, thawed
2 stalks celery, thinly sliced
4 green onions, sliced
1/4 cup slivered almonds, toasted
DRESSING:
2 tablespoons red wine vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1/4 cup canola oil
2 teaspoons sesame oil
In medium saucepan, combine rice with enough cold water to cover an inch above rice. Heat to boiling. Drain water from rice and add bouillon. Simmer covered until liquid is absorbed, about 1 hour to 1 hour and 15 minutes.
While rice is still warm, toss with Dressing; cool. In medium bowl, combine rice with peas, celery, green onions and almonds. Toss well. Refrigerate.
For Dressing: Combine all dressing ingredients and mix well.
Makes 8 servings.
