SOUTHWESTERN POTATO SALAD
List of Ingredients
1 cup good-quality prepared mayonnaise, regular or reduced-calorie
1/4 cup Dijon mustard
2 tablespoons fresh lime juice
1 medium tomato, chopped
2 tablespoons chopped cilantro
1/2 jalapeno, finely diced
2 scallions, chopped, white and green parts
1/2 medium red onion, thinly sliced
1/2 teaspoon cayenne
1 small garlic clove, minced
Salt and freshly ground pepper
16 new potatoes, about 2 pounds, cooked, drained, and sliced 1/2-inch thick
Recipe
With a spatula, combine the mayonnaise and mustard with the remaining ingredients, except the potatoes, and mix well. Season to taste and pour over the warm potatoes.
