    1/2 c light olive oil
    3 tablespoons lite wine vinegar
    1 T Dijon mustard
    1 T plus 2 tsp honey
    2 T heavy cream (optional)
    salt and pepper to taste

    Combine all the ingredients in a blender and whirl until smooth. Keep refrigerated until ready to use.
    makes 3/4 cup
