Pimiento and Roasted Garlic Cheese Sprea

8 ounces shredded sharp cheddar cheese
8 ounces shredded white cheddar cheese
1 tablespoon sugar
1/2 tablespoon cider vinegar
1/8 teaspoon cayenne
1/4 teaspoon fresh ground black pepper
1 cup mayonnaise
4 ounces chopped roasted red bell pepper
1/4 cup chopped roasted garlic
Combine all ingredients, except red peppers and garlic in the bowl of a food processor. Pulse until well mixed. Add red peppers and garlic; pulse several times until mixed. Taste for additional pepper and salt. Allow to rest, covered in refrigerator, 30 minutes to overnight.
