Vidalia or other sweet onions
Peanut oil (but any good oil will work)
A couple of eggs, beaten
Cake flour
Milk or buttermilk
Paprika
Salt and pepper
Use whatever amounts you need depending on the number of onion rings you want to make.
Soak the onions in the milk or buttermilk (I soaked them about a half-hour). Coat them in the beaten eggs, then cover them in the cake flour, which has had salt, lots of pepper and a pretty good amount of paprika added.
Put the coated rings back into the egg briefly, then recover them with the flour mixture.
Place on a baking sheet (if your freezer shelves are wide enough) or waxed paper.
My freezer shelves are very narrow, so I just used a cookie-cooling rack, placed onion rings on it, then used waxed paper and placed two more layers on that same rack. Freeze the rings.
Heat oil (but don’t let it get so hot it smokes); carefully drop in onion rings. Turn to ensure even cooking. It’ll only take a couple of minutes to have a half dozen rings ready to eat.
