    ASPARAGUS SOUP

    List of Ingredients






    2 tablespoons butter

    2 tablespoons flour

    1 1/2 cups half-and-half

    1 1/2 cups whipping cream

    2 cups asparagus, cut in 1/2-inch pieces

    1/2 teaspoon white pepper

    1 teaspoon salt, or to taste

    2 tablespoons brandy

    Melt the butter and add the flour. Cook over medium heat for two to three minutes, stirring constantly. Do not brown.

    Slowly add the half-and-half and whipping cream, whisking constantly to avoid forming lumps, until mixture is smooth.

    Add the remaining ingredients. Bring to a strong simmer until the asparagus is tender (10 to 15 minutes).

    Puree the soup in a blender until smooth. Serve.
