List of Ingredients
1/2 pound lean ground beef
1/2 pound ground pork
1 large egg
1/2 cup cooked brown rice
1 cup chopped onion, divided use
1/2 teaspoon dried thyme
Cooking spray
4 cups water
1 tomato, seeded and chopped
2 tablespoons chili powder
1 clove garlic, minced
2 carrots, peeled and sliced
2 celery ribs, sliced
1 cup frozen peas
Mix beef, pork, egg, rice, half of the onion and the thyme in a large bowl; form into small balls. Coat a large, heavy-bottomed saucepan with cooking spray and brown meatballs for 5 to 10 minutes.
Add water, tomato, chili powder, garlic and remaining onion; simmer 35 minutes. Add carrots, celery and peas. Simmer 10 minutes or until vegetables are tender. Serve hot, with warm corn tortillas, if desired.
Makes 4 servings.
