    1 TBS unsalted butter
    1 small onion minced
    2 cups minced celery
    1 TBS flour
    6 c hot chicken broth
    1 tsp salt
    1 tsp white pepper
    1 sprig fresh thyme

    Melt the butter in a large saucepan over medium heat. Add the onion and celery and cook until the celery is softened, about 10 minutes. Add the flour and cook, stirring for 1 to 2 minutes, until lightly colored but not browned.

    Stir in the hot broth until the flour is incorporated, then add the salt, pepper, and thyme. Bring to a simmer, then lower the heat to medium-low and simmer for 15-20 minutes. can separate into individual containers and freeze to use as an ingredient in other recipes
