Banana Salsa
List of Ingredients
1 large, firm banana, slightly underripe, peel and dice
½ cup each red, green, yellow bell peppers, seed and dice
3 Tbsp chopped fresh cilantro
2 scallions, chopped
2 Tbsp fresh lime juice
1 Tbsp brown sugar
2 tsp minced ginger root
2 tsp olive oil
1 tsp habanero) pepper, seeded (or to taste. You may substitute 2 tsp minced jalapeno)
salt to taste
Recipe
Mix ingredients, taste and adjust seasonings.
Serve within one hour. Makes 2 cups. Perfect served with a Mexican seafood omelette or grilled shrimp.
