    Smoked Salmon Salsa

    List of Ingredients





    8 ounces smoked salmon, chopped
    1/4 cup chopped red onion
    2 tablespoons chopped fresh cilantro
    2 tablespoons chopped flat leaf parsley
    1 jalapeno pepper, seeded, diced
    2 tablespoons olive oil
    1 1/2 teaspoons Creole seasoning or cayenne pepper to taste
    Crostini or melba toast



    Recipe



    In a medium bowl, combine all the ingredients. Refrigerate for 30 minutes. Adjust the seasonings to taste as necessary. Serve the salsa on melba toasts or crostini.

    Makes 2 cups or 32 tablespoons
