1 (8-ounce) can pineapple chunks, drained
1/4 cup angel flake coconut
1 orange, peeled and cut into cubes
1/4 cup green onions (optional)
1 tablespoon chopped jalapeno pepper (optional)
2 tablespoons light ranch dressing
Mix together all ingredients. Serve with hot pork, chicken or beef with rice alongside.
